Yes, you can flip them, personally don't often but they are designed to do so, it has an incredible seal you can feel when the handles close. You will witness the moisture when you open the lid and truly see how much moisture and flavor is trapped in the pans while cooking. They do recommend seasoning the pans on first use and after that no butter or oils needed, I think that is because there is so much moisture on its own they additional is not needed. Healthy cooking at its best, less or no oil needed. I put them to the test with melted marshmallows to make rice crispy treats and nothing sticks... just wonderful quality.
